BTW, if you're from the south, down home-green beans are cooked with a little piece of fat back and sometimes some new potatoes. Fresh green beans are the only time I break down and buy the pork fat. It makes all the difference in the world. We made some killer lasagna recently too. Ever add a little diced pepperoni with the ground beef and italian sausage? Yum!

my Mom's family came from Georgia by way of Iowa, and Mom always put bacon in her beans...tomato too in high summer... I don't like stewed bacon...
and use EVoilve oil for health reasons...
and yes, they are cooked FOREVER with red onion, garlic salt & cracked black pepper...
my dad's family came from Clifty Co. in the hills of Tennessee...
but they were poor hill billies and just cooked dried beans...never grew green beans...
my dad used to take cold biscuits with mashed beans to school for lunch...
I don't like ground beef in my lasagna...just sweet or mild Italian sausage... the pepperoni is probably too spicy for me...
Nothing at all wrong with a pot of soup beans - pintos to the rest of the world outside the south! Big pot of soup beans, pone of cornbread, a little fried potatoes on the side - can't do it often, but sometimes, only a "brown dinner" will do. You can add cooked greens if you want to break up the brown-ness. Kentucky mountain roots, definitely.
...because Dad ate almost "nothing but..." growing up...
Mom never made "beans"...
but I had an aunt whose recipe has become "mine"...
chop up an onion, add 1 lb soaked beans[she used pinks],cover with water, simmer with a ham hock a couple of hours...
I use chopped garlic & simmer in chix stock...add s&p to taste...
feed the hock rind & bones to the critters & everyone has several tasty meals...
along with the cornbread...maybe some greens...yum...
